Hummingbird Brownies

Salam & Hi!

The Lil Chefs baked again! This time, the Traditional Hummingbird Brownies. Its unbelievably simple!

The Recipe

Baking-tray, lined with greaseproof paper
200g dark chocolate, chopped
175g unsalted butter
325g caster sugar
130g plain flour
3 eggs
Icing sugar (decoration)






Chopped Dark Choc & Butter without the base of the bowl touch the boiling water




They didnt have enough chocolate bar, thus they mixed some chocolate powder

Stirred until ribbon


Sieving flour


Sieved flour and choc mixture mixed



 Eggs added



Mixing them well


 Mixture poured into the baking pan 
and 
next popped into the oven for 30 mins at 170 degree.

Kiddies in the Kitchen

Salam & Hi!

Kids really love to help in the kitchen, dont they? ^^ But this two lil chefs dont just wanna help, they wanna conquer the kitchen! Their mission was to bake cupcakes with minimal help by their sisters. *Fineeee.....!*





Lastly they admitted that they actually need us (the sisters) to search for the recipe. And..... most importantly, to drive them to the supermarket to get all the ingredients! Ahaaa. =D

Being a Hummingbird Bakery super fan, this was what i suggested Hummingbird's Black Bottom Cupcakes recipe... They improvised by following the mixing steps from a youtube video. (the kids skipped the topping btw)







For the chocolate sponge base

  1. 190g plain flour
  2. 120g caster sugar
  3. 40g cocoa powder, plus extra to decorate
  4. ½ tsp bicarbonate of soda
  5. 40 ml sunflower oil
  6. 1½ tsps white vinegar
  7. ½ tsp vanilla extract





Plain flour, Caster sugar, Cocoa powder and Bicarbonate soda mixed & whisked. 









Oil, Vinegar & Vanilla extract mixed with 125ml water 
poured into the previous mixture.




For the cheesecake filling

  1. 140g cream cheese
  2. 60g caster sugar
  3. 1 egg
  4. ½ tsp vanilla extract
  5. A pinch of salt
  6. 100g milk chocolate chips







Mixed all the ingredients

  1. ....and lastly added the choc chips



Lil Chefs preparing both mixtures into the colourful silicone cupcakes molds. First the choc mixture then the cheese mixture.






Into the oven 17 degrees for around 30 mins. And Poooff!

Chocolate Cake Craving

Salam & Hi!

Staying at home really makes you wanna eat...a looot! Today i craved for chocolate cake! *Mak Tok's chocolate cake particularly* 

Drooling at Nigella Lawson's chocolate cake !! I need to bake one for myself. But i didnt use Nigella's recipe tho, instead Kak Izan's recipe from My Resipi. *malaysian cakes are the best!* =P

Ingredients

(A)
1 cup cocoa powder
1/2 cup caster sugar
1 cup hot water
1/2 cup evaporated milk

(B)
250g unsalted butter
2 cups caster sugar (i used 1 and a half)
4 medium eggs
2 teaspoons vanilla essence
2 cups plain flour
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda (not in the recipe, but i added at my own risk.. *wink*)



Everything from (A) except for the evaporated milk, stirred under low heat until the mixture looked glossy (cant i say it glossy? huhu.)
Left to cool for a bit before adding the evaporated milk




 Butter & Sugar




Eggs added one by one




Vanilla essence added




1/4 of the (A) mixture 



1/4 of sieved flour, plus bicarbonate of soda & baking powder


Alternately the (A) mixture and sieved flour were added.





Done




Into the silicone cake pan 
(my fav! no burned bottoms or edges and easy to remove the cake out from the pan!)



Extra as cuppies




Into the oven
180 degrees
40 mins (more or less)




 The cuppies took less time to cook




It cracked on top, thats a good sign! =P
