I'm back in Dublin...! It feels soo good to be home. My own bed, my own kitchen.. everything i need is mine! But this one thing i really miss about London. The Hummingbird Bakery Red Velvet Cupcakes!
Told the engineer bout it (hoping to get it surprised on my doorstep), but i got this instead....
Red Velvet Cupcakes from the Hummingbird Bakery Recipe

Apparently, the recipe was not that hard to follow. So i decided to drag myself to the nearby Tesco and get all the ingredients i need, and start baking!

It all paid off! Got 12 full cupcakes for myself! Tadaaa~
Please excuse the unsymmetrical looking.
Reason : My VERY 1st try
So here is the recipe i followed:
- 60g unsalted butter, at room temperature
- 150g caster sugar
- 1 egg
- 10g cocoa powder (i added more actually cuz i used the drinking choc!)
- 20ml red food colouring (do not feel scared, true thats a whole lot of food colouring! but to get the red looking, it is kinda necessary)
- ½tsp vanilla extract
- 120ml buttermilk
- 150g plain flour
- ½tsp salt
- ½tsp bicarbonate of soda
- 1½tsp malt vinegar
Butter & Caster Sugar
(before adding the egg)
Cocoa Powder, Red Colouring & Vanilla Extract paste
Both of the above mixtures mixed.
Next is to add salt, bicarbonate of soda & vinegar
Intooo the oven!
170 degrees for 25 mins.
As for the frosting...
- 300g icing sugar, sifted (i used lesser)
- 50g unsalted butter, at room temperature
- 125g cream cheese, cold
Icing Sugar & Unsalted Butter
Cream cheese added
A bit for the decoration (to look more exact as the hummingbird's.. huhu.)
Yeah, need to sacrifice a cupcake for this! =P
You can get these served by an hour! I kid u not!
